Bacon Cheddar Drop Biscuits

Ingredients:
Yield 4-6 Servings- ½ cup bacon small diced and rendered until crispy
- 2 cups A/P flour
- 1 tbsp baking powder
- 1 tsp sugar
- 1/2 tsp onion powder
- ½ garlic powder
- ¼ tsp salt
- 1 stick butter (cubed)
- ¾ cup whole milk
- ¼ cup heavy cream
- ½ cup shredded medium cheddar
Directions:
- Preheat the oven to 400 degrees.
- In a large skillet add in the bacon pieces and render the bacon down until crispy (do not burn the bacon – The heat should be medium). When bacon is crispy remove from the grease and place in a paper towel lined bowl. Pour out most of the bacon grease and hold for later. Make sure to leave some in the skillet so the biscuits do not stick.
- In a large mixing bowl add in the flour, baking soda, onion powder, garlic powder, salt and sugar and mix well. Take cold cubed butter and cut into the flour using a mixer, fork, knives, or fingers. (I prefer to use my hands)
- Once butter is incorporated well and the flour mix is crumbly and pebble like add the cheddar, bacon bits, milk and cream. Mix everything together.
- The dough should not be dry or runny. It needs to be mixed well and sticky.
- Use a large tablespoon to scoop out large balls of the dough and place in the greased skillet. Continue this process until the skillet is full of biscuits. Do not stack them.
- Place in the oven at 400 degrees for about 25 minutes or until risen and golden brown.
Garlic/Bacon Butter Topping
- ½ stick butter
- 1 tbsp parsley
- 2 cloves garlic
- 2 tbsp bacon grease
Heat butter and bacon grease in a saucepan. Add in garlic and sauté until aromatic. Add in parsley and remove from heat. Brush over the biscuits when ready.
