Caprese Baked Puppy Drum
Here's a fun-fish-dish with a traditional Italian twist! In this recipe, Chef Chad uses fresh ingredients to create a flavorful dish for puppy drum caught right off the coast of Cape Lookout right here in NC. Who doesn't love fresh seafood?!
Ingredients:
- Fresh Puppy Drum Fish Fillets
- 1 pint Cherry Tomatoes
- ½ pound sliced Fresh Mozzarella
- 2 tbsp Balsamic Vinegar
- 2 tbsp Olive Oil
- Fresh Basil Leaves
- Salt & Pepper
Directions:
- Preheat oven to 350. Layer fish in the casserole pan and season fish with salt and pepper
- Drizzle the fish with both the olive oil and the balsamic vinegar
- Add half of the cherry tomatoes to the dish
- Next add a layer of mozzarella cheese and fresh basil, finish with the remaining tomatoes.
- Put the dish into a preheated oven - 350 degrees for 20 minutes until cheese is nicely melted. Optionally if you would like a nice brown crispy finish on the cheese, use the broiler for about 5 more minutes after baking.
