Caesar Shrimp Salad

In a skillet over medium heat, sauté shrimp and garlic in oil just until cooked through, 5 to 10 minutes. Remove shrimp; cover and chill. Toss together romaine, spring greens and spinach in a medium bowl. Layer greens mixture, shrimp, cheese and dressing in a large salad bowl; repeat layering until bowl is full. Sprinkle croutons on top; garnish with cherry tomatoes, if desired.?Serves 10 to 12.


Creamy Ranch Macaroni Salad

Cook shells according to package directions; drain and rinse with cold water. Set aside. Combine onion, celery and parsley in a large bowl; add shells and toss together. Add sour cream and half the salad dressing mix; stir well. Add mayonnaise and remaining dressing mix; stir again. Toss with Cheddar cheese. Serves 8 to 10.

 

Creamy Fruit Cocktail Salad

Combine cream cheese and condensed milk in a bowl; blend with an electric mixer on medium speed until smooth. Add reserved fruit cocktail juice; blend well. Fold in remaining ingredients with a spoon; stir to coat. Cover and chill for 30 minutes. Serves 8.
