Easy Fried Rice
Ingredients:
- Sesame oil, 3 tsp., separated
- Carrots, 1/2 cup, cut like matchsticks
- Green onions, 1/2 cup, sliced
- Garlic, 2 tsp., minced
- Mushrooms, 1 cup, sliced
- Pepper, 1/4 tsp, thinly sliced
- Rice, 4 cups, chilled and cooked
- Egg, 1, lightly beaten
- Soy sauce, 2 Tbsp.
Directions:
- Place a large skillet or wok over high heat.
- Add 2 tsp. sesame oil.
- When the oil is hot, add the vegetables. Fry until your vegetables are tender; then set aside in a large bowl.
- Add the remaining oil to your skillet or wok. Then add your egg and scramble until cooked thoroughly.
- Leave the egg in your skillet. Add your rice and soy sauce and fry until the rice is brown and crispy.
- Add vegetables and cook 1 - 2 minutes until warm.
- Makes 4 servings
