Easy Fried Rice


  • Sesame oil, 3 tsp., separated
  • Carrots, 1/2 cup, cut like matchsticks
  • Green onions, 1/2 cup, sliced
  • Garlic, 2 tsp., minced
  • Mushrooms, 1 cup, sliced
  • Pepper, 1/4 tsp, thinly sliced
  • Rice, 4 cups, chilled and cooked
  • Egg, 1, lightly beaten
  • Soy sauce, 2 Tbsp.


  • Place a large skillet or wok over high heat.
  • Add 2 tsp. sesame oil.
  • When the oil is hot, add the vegetables. Fry until your vegetables are tender; then set aside in a large bowl.
  • Add the remaining oil to your skillet or wok. Then add your egg and scramble until cooked thoroughly.
  • Leave the egg in your skillet. Add your rice and soy sauce and fry until the rice is brown and crispy.
  • Add vegetables and cook 1 - 2 minutes until warm.
  • Makes 4 servings
