Southern Cornbread

Ingredients:

  • Shortening, 4 Tbsp.
  • Egg, 1
  • Baking soda, 1/2 tsp.
  • Self-rising cornmeal, 2 cups
  • Buttermilk, 1-3/4 cups

Directions:

  • Preheat your oven to 450 degrees F.
  • Melt the shortening in a cast iron skillet. Set aside.
  • In a large bowl, beat the egg thoroughly. Add the baking soda, buttermilk, and cornmeal. Mix well.
  • Add 2 Tbsp. of the shortening that you previously melted. If the batter looks easy to pour, then it is ready for the next step. If it appears to be too thick, then add a little water.
  • Pour your cornbread batter into your hot skillet.
  • Bake for approximately 20 minutes or until your cornbread is golden brown.
